There are no strict guidelines for how carbonation must be introduced in sparkling wine, which often makes it a more budget-friendly option for enjoying bubbles. While Champagne and Méthode Cap Classique (MCC) are types of sparkling wine, they come with specific production methods and regulations.

What Is Sparkling Wine and How Does It Differ from Champagne?

You may be wondering about the difference between MCC and champagne. The distinction lies mainly in origin and production method. Champagne is a specific type of MCC that must be produced in the Champagne region of France under strict regulations. It’s typically made from a blend of Chardonnay, Pinot Noir, and Pinot Meunier grapes using the traditional method, also known as Méthode Champenoise. This includes primary fermentation to create a still wine, followed by a second fermentation in the bottle that generates carbon dioxide and gives Champagne its bubbles. The wine is then aged on the “lees” (dead yeast cells), riddled, disgorged, and finally dosaged before corking and ageing.

In South Africa, we use the same method but call it Méthode Cap Classique (MCC). So when you choose a South African MCC, you’re still enjoying a product crafted with the same care and technique as the best Champagnes.
