Champagne is a specific type of MCC that must be produced in the Champagne region of France under strict regulations. This includes primary fermentation to create a still wine, followed by a second fermentation in the bottle that generates carbon dioxide and gives Champagne its bubbles. The wine is then aged on the “lees” (dead yeast cells), riddled, disgorged, and finally dosaged before corking and ageing.
In South Africa, we use the same method but call it Méthode Cap Classique (MCC). So when you choose a South African MCC, you’re still enjoying a product crafted with the same care and technique as the best Champagnes.
